Pancake and Waffle Mix
I have been on a journey lately to save money and cut out pre-packaged foods. One of my kids' favorite things to make is pancakes, and while I love the Sun Pancake recipe, I wanted something they could make with little supervision. Pintrest, my trusted friend, led me to a wonderful site with all kinds of make-a-mix cookery. I haven't tried nearly enough of them yet, but that is on my list.
This recipe is a little more complicated than the "just add water" but not much more (until you get to the waffles). Note: The waffles, though, are light, fluffy, and absolutely splendid. Definitely worth the little extra time, but it has not yet been approved for my kids to take on that recipe yet.
| 6 | c | All-Purpose Flour |
| 2 | c | Flour, Whole Wheat |
| 2 | c | Milk, powdered |
| 1/2 | c | Sugar |
| 3 | Tbsp | Baking Powder |
| 1 1/2 | Tbsp | Baking Soda |
| 2 | tsp | Salt |
Mix together in a large bowl and store in an air-tight container.
I use freshly ground whole wheat, but you can substitute all-purpose flour for the remainder of the wheat flour if you want. Even after converting my family to homemade wheat bread (see recipe under breads), I can't seem to get my family to switch for the things they think should be sweet (cookies, pancakes), but I can sneak some wheat in here and there while their not looking.

| 1 1/2 | c | water |
| 1 | egg | |
| 2 | Tbsp | oil |
Whisk together all ingredients and let sit for 2 minutes. Add additional water if desired.
Cook on pre-heated griddle or pan.

| 3 | Egg Whites | |
| 3 | egg yolks | |
| 1/4 | c | oil |
Beat egg whites until stiff peaks form.
Mix all other ingredients with a whisk until combined.
Gently fold egg whites into the batter until well incorporated.
Bake in pre-heated waffle iron.
These waffles are so light and fluffy that we have found they work wonderfully in a Belgium Waffle Iron. We tried our other waffle iron that makes more flat waffles and they didn't turn out at all. I am kind of sad to report that the heart-shaped waffle iron we have had since we were first married has now been donated to the local thrift store for someone else to love because it can't handle these wonderful waffles. A bitter-sweet day.
